Different kinds of Chocolate

After reading the chapter Cooking with chocolate I was curious to find out how they make other kinds of chocolates like white chocolate and dutch chocolate. The difference between regular chocolate and white chocolate is that it lacks the actual cocoa solids which gives it its white color. White chocolate only contains cocoa butter along with other fats, sugar milk, and added flavors. This is why many do not consider white chocolate a type of chocolate at all. Dutch chocolate is a very popular type of chocolate which originated from the Dutch. It is made with either cocoa powder or chocolate liquor which has withstood treatment with alkalizing agents. This treatment gives dutch chocolate a deep color and flavor.
