In any case, here is my family’s recipe for Insalata Caprese:
buffalo mozzarella
fresh ripe red tomatoes
fresh basil
extra virgin olive oil
Slice mozzarella into slices of medium thickness (about ½-inch). Lay flat on a platter. Slice tomatoes into comparable sized rounds and lay across mozzarella. Top with pieces of fresh basil either chopped or whole. Garnish with olive oil.
Alternatively you can add several alternating layers of tomatoes and mozzarella or put the ingredients in a bowl to create a tossed salad.

I really enjoyed this dish because of the fresh tomatoes and basil leaves that were used. I didn't feel guilty after eating so many!
The "insalata caprese" looked really delicious at the potluck. I wish I wasn't lactose intolerant so I could try some. Thanks for sharing the recipe with us. It's also really awesome that you know so much about your family history.
